My Favorite Recipe Yet

I've been working on a special recipe for the last 9 months. The last few days have been especially busy but it's finally complete.

The special ingredients are as follows:
  • 4 lbs love
  • 15 oz of joy
Mix these ingredients and let them bake for 9 months and you will have the sweetest miracle.

Skinny Eggnog Latte



There is something about grabbing a Starbucks Eggnog Latte before venturing out to do my Christmas shopping that puts me in the Holiday spirit. Well now you can make one in the convenience of your own cozy home at a fraction of the price and without all those added calories. This is so easy to make. If you have an espresso machine, make espresso with good strong coffee and steam your eggnog with a little milk to make it frothy and hot. Top with a dash of nutmeg and even some fat free whipped topping if you wish. If you don't have an espresso machine, no worries. Make your coffee a little stronger and heat your eggnog over the stove or in the microwave, then whip it in the blender.

Skinny Eggnog



Eggnog evokes fond childhood Christmas memories for me. I love it with or without the alcohol, hot or cold. This low fat eggnog recipe is rich and creamy. Using vanilla beans is really worth the added expense so don't skimp here. This is easy to make and so much better than store bought eggnog so if you've never made eggnog before, give this a try. You can make this a few days ahead. Use your leftovers for Eggnog French Toast, Eggnog Souffles, or Eggnog Lattes. Yum!

Pasta with Bolognese Sauce



Bolognese sauce is a ground beef ragú made with pancetta, onions, carrots, celery, tomatoes, wine, and cream.

Everyone raves about my Bolognese sauce. I never really thought of it as a light dish and I usually make it when I have a large crowd over for dinner.

I decided to tweak my recipe to make this lighter version by using lean chopped beef, reducing the butter and using half and half instead of heavy cream. Results were just as amazing as always and quite frankly, you would never know the difference. The trick to a good Bolognese sauce is the longer it cooks, the better it tastes so this is a perfect Sunday meal. Let this simmer on low at least an hour and a half or up to 3 hours if you have the time.

Serve it over pasta or even spaghetti squash, enjoy!!

Chocolate Banana Soufflés



Soufflés are light and fluffy and made using mostly egg whites and no flour, which is great if you are on a low carb, or gluten free diet. My daughter makes soufflés all the time, and actually made the ones pictured here. They are not hard to make, so don't be intimidated. They should be eaten right away or they typically fall after 5-10 minutes so if you are serving these to guests, plan to eat them right out of the oven. I love topping mine with a heaping spoon of cool whip.

Skinny Turkey Cuban Sandwich



If you're craving a Cuban sandwich, this should satisfy your craving! I have a weakness for Cuban sandwiches, if you have never tried one, they are usually made with roast pork, ham, Swiss cheese, thin sliced pickles and mustard, then pressed with a sandwich press or a panini grill until everything is hot and the cheese is melted. Very popular in Miami Florida. I think leftover turkey breast makes a great, lighter alternative to roast pork and it's a great way to use your leftover turkey this Thanksgiving. I found this French bread in the deli section of my supermarket that was soft and perfect for a Cuban, and only 2 pts a piece. Have one of these for lunch or dinner and enjoy!!

Turkey Cuban Sandwich

Servings: 1 • Size: 1 sandwich • Calories: 321 • Old Points: 7 pts • Points+: 10 pts
  • 1 6" slice French Bread (fat free)
  • 3 oz left over turkey breast, heated
  • 1 slice of ham
  • 2 thin slices of Alpine Lace Swiss cheese
  • 3 slices of pickles
  • mustard
  • Pam cooking spray
Slice the bread open. Spread mustard on both sides. Place cheese and pickles on the bread. Add turkey and top with ham. Close your sandwich, spray the sandwich press with buttered flavored Pam and press down until the cheese is melted and the crust is a little crispy. Cut the sandwich on the diagonal and enjoy!

Turkey Cutlets with Parmesan Crust



These cutlets have a wonderful Parmesan crust and taste great topped with fresh lemon. A quick and easy weeknight meal your family will love. I like to serve this with a salad and a simple low point veggie like Sauteéd Brussel Sprouts, Sauteéd Zucchini with Tomatoes, String Beans with Garlic and Oil or Sauteéd Baby Zucchini. You'll be very tempted to have more than one cutlet!

Turkey Cutlets with Parmesan Bread-Crumb Crust

Servings: 8 • Serving Size: 1 cutlet Old Points: 4 pts • Points+: 5 pts
Calories: 184 • Fat: 6.2 g Carb: 5.8 g Fiber: 0.9 g Protein: 25.9 g
 

  • 8 (4 oz) turkey breast cutlets
  • 4 egg whites, beat
  • 3/4 cup seasoned breadcrumbs
  • 1/3 cup Parmesan cheese
  • salt and fresh pepper
  • 2 tbsp butter
  • 2 tsp olive oil
  • lemon wedges for serving
Heat oven to 250°.

Season
cutlets with salt and pepper. Combine bread crumbs and Parmesan cheese in a medium bowl. In another bowl beat egg whites. Dip turkey cutlets in egg whites, then breadcrumb mixture, shaking off excess.

Heat a large nonstick frying pan on medium heat. Add half of the butter and olive oil. When butter melts, add 4 cutlets and cook a few minutes on each side, until golden brown and cooked through. Set aside on a baking sheet and keep warm in oven. Add remaining butter and oil to frying pan. Cook remaining cutlets. Serve with lemon wedges.

A hearty bowl of this soup is a perfect meal for a cool evening. Gruyere is typically used in French Onion, but Alpine Lace is a great reduced fat alternative.

Spinach Stracciatella Soup with Orzo



Stracciatella soup is an Italian classic soup I like to make with orzo to make a complete meal. This is perfect served with a good crusty bread or garlic bread. Use a good parmesan cheese like Parmigiano Reggiano for the best results. A simple weeknight meal that takes less than 20 minutes to make.

  • 6 cups fat free chicken broth
  • 2 large eggs
  • 1/2 cup freshly grated Parmesan
  • 1/4 cup chopped flat-leaf parsley
  • 9 oz baby spinach
  • 4 oz uncooked orzo
  • Salt and freshly ground black pepper
Bring 5 cups chicken broth to a boil. In a medium bowl, combine remaining cup of cold chicken broth with eggs, cheese and parsley and whisk well. Whisk into boiling pot and cook 3-4 minutes on low. Add orzo and cook according to package directions. When pasta is done, add the baby spinach and mix until it welts. Remove from heat, add salt (if needed) and pepper to taste. Ladle into bowls and top with additional grated cheese.

Spicy Thai Beef and Jasmine Rice



I love a good rice dish, and I love spicy beef so this recipe sounded like something I would enjoy. I just received my order from the Asian Food Grocer and was excited with all my Asian ingredients and my lovely chopsticks. One of the items I purchased was Jasmine rice. I modified the recipe, which was on the back of the rice package by tweaking the seasoning, adding more vegetables and using lean beef.

Crock Pot Minestrone Soup



Minestrone soup is a classic hearty Italian soup with tomatoes, white beans, pasta and vegetables. You can use Swiss chard or kale instead of spinach if you wish and you don't have to puree the beans, it's just my preference. I modified this for the crock pot but I prefer to make this soup on the stove and let it simmer for about 45 minutes before adding the zucchini and pasta. The crock pot however is so convenient when you are working all day and want to come home to a cooked meal. I highly recommend adding the Parmesan cheese rind. This is also great with mini turkey meatballs, or even some sauteed crumbled turkey sausage.

Crock Pot Minestrone Soup

  • 1/2 onion, chopped
  • 1 cup carrots, chopped
  • 1 celery stalk, chopped
  • 2 garlic cloves, minced
  • 1 (28 oz) can diced tomatoes
  • 1 (15 oz) can white beans, drained, rinsed (cannellini or navy)
  • 3 cups fat free chicken broth (or vegetable broth for vegetarians)
  • 1 oz chunk of good Parmesan cheese rind
  • 1 fresh rosemary sprig
  • 2 bay leaves
  • 2 tbsp chopped fresh basil
  • 1/4 cup chopped fresh Italian parsley leaves
  • salt and fresh pepper
  • 1 medium zucchini, chopped
  • 2 cups chopped fresh or frozen (defrosted) spinach
  • 2 cups cooked small pasta like ditalini or elbows (al dente)
  • extra parmesan cheese to top (extra pts)
Rinse and drain beans. Puree beans with 1 cup of the broth in a blender.

In a crock pot, combine broth, tomatoes, pureed beans, carrots, celery, onion, garlic, herbs, Parmesan cheese rind, salt and pepper. Cover and cook on low for 6 to 8 hours.

Forty minutes before the soup is done cooking, add zucchini and spinach. Cover and cook 30 more minutes. Add cooked pasta, cook 10 minutes more. Remove bay leaves, rosemary sprig, parmesan rind and season to taste with salt and black pepper. Ladle soup into bowls and top with extra parmesan cheese.

Baked Bananas



I seem to be on a banana kick lately. These simple, guiltless baked bananas taste similar to Bananas Foster and you'll swear there's butter in there! Great served with whipped cream, fro-yo, chopped nuts, raisins or even served with oatmeal. Bananas are so good for you, they are naturally sweet and rich in potassium, which plays an important role decreasing the risk of high blood pressure and stroke. Enjoy this for dessert or breakfast!

Pumpkin Banana Bread



Baking is a science and remaking cakes and breads to make them healthier is not always as easy as say remaking a pot of soup or a casserole. So whenever I am experimenting with baking, my fingers are crossed the whole time. I wasn't too worried about this pumpkin banana bread because I basically took my Banana Nut Bread recipe which is a deliciously moist bread and I improvised it with the pumpkin and spices. This came out super moist and we had a difficult time waiting for it to cool because it smelled so good! We scoffed up half this bread before I got a chance to photograph it. This was wonderful topped with some Pumpkin Spiced Cream Cheese!

Potato Leek Soup



This is the kind of soup that is so simple to make yet tastes like you really know your way around the kitchen. I grew up loving this classic soup as a kid, and eating it always brings me back to a happy place. The flavors of the leeks and the potatoes compliment each other so well. I like mine pureed, but if you like it a bit chunky you can use a potato masher instead of an immersion blender to give you bigger chunks. This is ready in under 30 minutes. (To make this gluten-free, simply eliminate the flour)

Potato Leek Soup

Sodium 660.6 mg (without adding salt)

 
  • 1 bunch leeks (about 4) dark green stems removed
  • 1/2 large white onion, chopped
  • 2 russet potatoes, peeled and cut into cubes
  • 1 tbsp flour
  • 1 tbsp butter
  • 4 cups fat free chicken stock (or vegetable broth for vegetarians)
  • 1/2 cup 2% milk
  • salt and fresh pepper

Wash leeks very carefully to remove all grit. I usually cut them horizontally and separate the rings to make sure no dirt remains. Coarsely chop them when washed.

In a medium soup pot, melt butter and add flour on low flame. Using a wooden spoon, mix well. This will thicken your soup and give it a wonderful flavor.

Add chicken stock, leeks, onion, potatoes and bring to a boil. Cover and simmer on low for about 20-25 minutes, until potatoes are soft. Using an immersion blender, blend the soup until smooth adding the milk and adjusting salt and pepper to taste. Serve immediately.

Sautéed Brussels Sprouts



I was never a big fan of brussels sprouts until I tasted my friend Nicole's recipe. She shreds them first and then sautés them in garlic and oil which really allows the seasoning to flavor every bite. I added some diced shallots along with the garlic and really enjoyed these. This would make a nice Thanksgiving side dish. Give this method a try if you don't care for brussels sprouts, you might be pleasantly surprised like I was!

Honey Goat Cheese Dressing



Taste the wonderful flavors of fall in this beautiful salad with apples, craisins, pecans, honey and creamy goat cheese tossed with mixed baby greens. I love the combination of the goat cheese paired with the sweet taste of honey and fruit. This is great as a side salad or a light lunch.

I was surprised to learn that goat cheese is 30% lower in fat and calories than most cow’s milk and it's tolerable for those who cannot digest cow’s milk.

Pumpkin Spice No-Bake Cheesecake



This light and fluffy slice of cheesecake has a hint of fall inspired by my Pumpkin Spice Cream Cheese recipe. Quick and simple to make in under 10 minutes. You can further reduce the points by using fat free cream cheese if you wish, but I personally prefer using 1/3 fat cream cheese instead.

Pumpkin Spice No-Bake Cheesecake

Servings: 8 Size: 1/8th Calories: 239 Old Points: 5.25 pts • Points+: 6 pts
  • 7 oz 1/3 less fat Philadelphia Cream Cheese
  • 1/2 cup pureed pumpkin (canned is fine)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 cup brown sugar, unpacked
  • 8 oz Cool Whip Free, thawed
  • 9 inch reduced fat Graham Cracker Crust
In a large bowl using an electric mixer, whip cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice, and brown sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth. Spoon mixture into pie crust and chill for a few hours, until firm.

Gazpacho



Gazpacho is a chilled soup traditionally from Spain, a perfect way to use up end-of-summer vegetables in your garden.

It is traditionally made with tomatoes, cucumbers and peppers but you can get creative and make variations. For a Mexican Gazpacho you can add avocado, cilantro and jalapeño, for an Italian Gazpacho add fresh basil and Parmigiano Reggianno. Personally... I prefer my soup spicy with jalepeños, cilantro and avocado. How do you like your gazpacho?

Basil Green Goddess Salad Dressing



In the summer when we have so much basil we don't know what to do with it all, I love making this dressing to serve over my garden tomatoes and cucumbers.

I think it's genius adding basil to Green Goddess dressing, which I have to thank Ina Gartin for, my husband is basil obsessed, so this recipe always makes him happy.

Pictured here, I served this over a wedge of Iceberg along with some fresh heirloom tomatoes. You can also use Bibb lettuce, or Butter lettuce if you prefer. You can easily halve this recipe, this would last in the refrigerator about three days.

Blueberry Peach Crisp



I'm a sucker for pies, crisps and cobblers. There's something about eating a hot gooey crisp with a cold scoop of vanilla frozen yogurt cream that really does it for me!!

Xagave was kind enough to send me some agave nectar, a natural low calorie sweetener along with a cookbook which features many great recipes and a chart on how to convert your existing recipes. It saves 30%-50% of calories over sugar and honey, it's certified organic, and is low glycemic. I used it in this fruit crisp to replace most of the sugar and it was sweet and delicious. I can't wait to experiment with it some more!

Angel Hair with Shrimp and Asparagus



A simple pasta dish made with fresh garden tomatoes, asparagus in a light tomato broth.

I love pasta and crave it often. To keep it light, I loaded it up with vegetables used a high fiber pasta like Ronzoni Smart Taste which has the same great taste as regular pasta and my family doesn't notice the difference. The portions are very generous!

Pineapple Zucchini Cake with Cream Cheese Frosting



After browsing though My Baking Addition, I came across this Pineapple Zucchini Cake with Cream Cheese Frosting which looked absolutely incredible! With all the zucchini in my garden, I knew I had to make this. What's even more incredible, this cake is low in fat using only 3 tbsp of oil, and it's high in fiber so I didn't even have to alter the recipe much to make it low in points. One thing I did cheat on was grating the zucchini. Instead, I put it in my Ultimate Chopper which did a great job of grating it for me, in less than 5 minutes. I also omitted the ginger and nutmeg because I am personally not a fan, but I left it in the recipe in case you like it.

A delicious, healthy cake... is that an oxymoron?

Baked Chicken with Dijon and Lime



Thanks Paula Deen for this terrific recipe! I lightened Paula's recipe by removing the skin and I replaced the mayonnaise with light mayo. Since I removed the skin, I put it in the broiler for a few minutes to brown the top and give it a golden color after it finished baking. This chicken was a hit with me and the hubbie!

Chocolate Zucchini Bread



My giant zucchini that I picked from my garden today inspired me to try a new zucchini recipe. I have tons of zucchini recipes on my site that I rotate frequently but I've never tried baking bread with it. I found this recipe on Eating Well and reduced the sugar to 1 cup. This recipe replaced most of the fat with apple sauce so it's low in fat, yet is very moist. If you don't like nuts, you can replace them with chocolate chips.

  • 3 tsp kosher salt, less if you are using regular salt
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp fresh black pepper
  • 1/2 tsp cayenne pepper
  • 5 tbsp Hellman's light mayonnaise
  • 1 tsp Dijon mustard
  • Oil spray
Preheat oven to 400°. Line a baking sheet with foil and set a rack above. Spray rack with oil. 

Crush cereal in a food processor or chopper. In a bowl mix crushed cereal with salt, paprika, garlic powder, black pepper and cayenne pepper. Place in a shallow dish or ziplock bag. 

Combine mayonnaise and Dijon mustard. Using a cooking brush, brush onto chicken then coat chicken with crushed cereal mixture. Place chicken on wire rack and spray with oil. Bake 35-40 minutes.

Zucchini Carpaccio


Zucchini season is here which is a great reason to make this perfect summer side dish. Use a mandolin or potato peeler to thinly slice the zucchini. Let the zucchini marinade in the lemon juice for at least 10 minutes before topping with arugula and shaved Parmesan. You can serve this as an appetizer, side dish or even as a light lunch.

Arroz Con Gandules (Rice and Pigeon Peas)



I've gotten requests to add more latin recipes to my site which for me is never a problem since I LOVE latin food! Arroz Con Gandules (Rice with Pigeon Peas) is a Puerto Rican dish popular in the Carribean. The pigeon peas are loaded with fiber which makes this a healthy side if cooked right.

This is a lighter version of my cousin's recipe, who makes the best arroz con gandules I know! The most important part of this dish is in the seasoning. Your liquids should have lots of flavor and should taste slightly salty before adding the rice, otherwise it will taste a bit bland.

Heirloom Tomato Salad




A simple summer tomato salad made with heirloom tomatoes, kalamata olives, red onion, extra virgin olive oil and garden fresh basil. If you can't find heirloom tomatoes, you can use garden tomatoes instead. This is my husband's recipe and it's my favorite ways to eat tomatoes. Serve this as a side dish or for lunch with a nice crusty bread.

Pepper Steak


Strips of beef and peppers are stir fried in a wok to create a delicious main dish, ready in no time!

I love stir fried anything, this pepper steak is always a hit in my house. The key when stir frying is to have all your ingredients chopped and prepped before you start to cook. Once prepped, your meal will be ready in minutes. This is perfect served over white or brown rice.

Fourth of July Recipes



July Fourth is all about BBQs and celebrating outdoors, so whether you are having a party or going to one and need a dish to bring, here are some of my favorite recipes for backyard parties. Hopefully the weather will cooperate this year!

STARTERS

Pico de Gallo Salsa - Zero points. If you are lucky to have fresh tomatoes in your garden here is a great recipe that everyone will love and is easy to make. Serve with some baked chips for a perfect appetizer.

Chick Pea and Roasted Pepper Dip -
This healthy dip is easy to make and taste great with crudites such as cucumbers, peppers, zucchini and celery. Pita chips are also great on the side.

Guacamole - Your guests will devour this. Serve with light tortilla chips on the side and watch it go!

HEALTHY SIDES


Macaroni Salad with Tomatoes - What's a BBQ without the macaroni salad! Everyone will love this, I promise!

Potato Salad with String Beans - This is my friend Julia's recipe who is a great cook! She can make dirt taste great and this potato salad is amazing. Light with no mayo, just really good extra virgin olive oil.

Baby Red Potato Salad - An absolutely delicious potato salad, especially if your not a fan of traditional potato salad loaded with mayonnaise and celery like you find in the deli and it's only 2 pts per serving.

Southwest Black Bean Salad
- Corn, cilantro, black beans and avocado. A perfect summer side dish for grilled meat, fish or chicken.


ON THE GRILL

Filipino BBQ Skewers - Everyone loves these skewers. I make these at every bbq. Works great on chicken, pork or beef. Best if you marinade overnight.

Grilled Rosemary Lamb Chops - If you're a lamb lover like myself, these are simple to prepare and taste great.

Swordfish Burgers - Also works great with tuna or salmon. Very healthy alternative to beef burgers.

Asian Flank Steak Skewers - Ginger, garlic and sesame oil give these skewers a wonderful flavor.

DESSERT

Blueberry Cream Pie
- A no bake pie that is super light and takes 5 minutes to make.

No-Bake Cheese Cake - Low in points and delicious.

Strawberries and Cream - Strawberries are sweet this time of year and when filled with fat free whipped cream, this makes a delicious low point dessert you won't feel guilty eating!


COCKTAILS

Mango Bellinis
- What's a party without cocktails! These tropical bellinis are very summery.

Skinny Mojitos - My personal favorite cocktail!! If your like me and have lots of mint growing in your garden, here's a great way to use it!

Wine Spritzers
- If you're a wine lover, lighten them up and make spritzers!

Garlic Scape Basil Pesto





I went to the farmers market in Union Square this morning where I encountered these garlic scapes. Never seeing these before, I was told they are the shoots that grow from the bulb that eventually straighten out and bloom, and they are only available for a short time. Farmers remove these so the garlic bulb can get more energy to grow larger. These have a milder garlic flavor than garlic cloves, similar to a green onion, but with a garlic taste. The vendor at the market told me you can replace garlic in recipes or you can make a pesto which you can use on bread, in risotto, pasta, bruschetta, etc. I will now be purchasing these scapes on a regular basis if I can find them!
