Potato and Green Bean Salad




This is my new favorite potato salad. Extra olive oil and good balsamic vinegar really makes a difference in the taste. I am looking forward to the warmer weather to make this at my next bbq but this can be served all year as a fabulous side dish.

Balsamic Chicken with Roasted Vegetables




Chicken and vegetables seasoned with sage, rosemary and balsamic vinegar, then baked in the oven. A delicious healthy meal, with very little clean-up.

This great Italian dish was from my cooking session with my good friend Julia of Julia's Healthy Italian. She's a mom of four small kids, an amazing cook and was so sweet to share this dish with all of you.

Prep time is quick, throw it in the oven and dinner is ready in 35-40 minutes. For easy clean up you can make this in disposable tins.

Eggs in Purgatory with Asparagus




Eggs poached in chicken broth and filetto di pomodoro with asparagus topped Pecorino Romano. This is perfect for lunch or dinner, use a spoon or bread to soak up all the yummy broth!

This Italian peasant dish was shared with me from my friend Julia of Julia's Healthy Italian. Passed down from her mom when she lived in Italy, it was popular because eggs for dinner is an inexpensive dish that is high in protein and feeds a whole family.

I found this wonderful, comforting, light and delicious and will certainly make it again!

Quinoa "Fried Rice"




Quinoa males a great alternative to rice. This quick dish was put together in minutes using leftover quinoa made earlier in the week. Quinoa expands to double it's size when cooking, leftovers can refrigerated to use throughout the week.

Enjoy this as an ovo-vegetarian main dish, or would be a great side dish with grilled chicken or shrimp.

Combining cooked quinoa and some leftover homemade sauce like filetto di pomodoro you can make a quick, easy meal in minutes. This risotto uses quinoa in place of rice and is delicious! Much quicker to make than traditional risotto and loaded with protein, minerals and amino acids.

Basic Quinoa Recipe


 

Quinoa (KEEN-wah) is a protein packed ancient seed from South America, similar to the texture of brown rice when cooked with a nutty flavor. It contains all 9 essential amino acids, lysine, phosphorous, copper, iron and magnesium and it is easy to make. It's not truly a grain, it's actually a relative of spinach.

It is recommended that you soak and rinse the seeds well before cooking. Once cooked the seeds expand about 4 times their original size, so 1 cup of uncooked quinoa seeds yields approximately 4 cups cooked quinoa. Preparation is simple, 1 cup quinoa, 2 cups water or broth and is done in about 15 minutes.

Filetto di Pomodoro




Last night I had the pleasure of having my friend Julia over to show me some of her delicious recipes. Julia is an amazing Italian cook. She can make leather taste good if she had to cook it! Her secret is simple, she cooks with only quality ingredients, like Pecorino Romano, good extra virgin olive oil and fresh herbs are all subtle differences that make food go from good to great. She always has on hand, a can of her own homemade filetto di pomodoro sauce she makes from scratch in the summer when tomatoes are at their peak and jars them to use throughout the year. She said she always has a jar in the fridge to incorporate into her weekly recipes. When not using fresh tomatoes, she uses Tuttoroso imported canned tomatoes. Here is her simple pomodoro sauce recipe from canned tomatoes. Make a large batch so you can keep it on hand for recipes throughout the week.

Chimichurri Sauce - 1 ww pt

Chimichurri Sauce

In Argentina, this sauce is a must over grilled flank or skirt steak. You can also use this as a marinade for steaks. I always make this when I make Brazilian black beans or tostones. A little goes a long way, adjust the heat according to your taste.

Serving Size: 1 tbsp Time: 5 minutes Points: 1 ww point

  • 1/4 bunch (3/4 cups) parsley finely chopped (no stems)
  • 2 tbsp red onion finely chopped
  • 1 clove garlic, minced
  • 1/2 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • salt and pepper
  • 1/2 tsp crushed red pepper flakes

Mix all ingredients together. This is best when you chop the onions by hand rather than in a food chopper. Not sure why. Enjoy!!

Turkey Meatloaf




A quick and easy dinner to prepare on a busy week night. Mix all the ingredients and throw it in the oven. In one hour it's done! Serve this with some garlic mashed potatoes and a vegetable for a complete meal.

Puerto Rican Style Beans




Pink beans with diced potatoes seasoned to perfection and ready in less than 20 minutes.

My husband's favorite meal is rice and beans so this side dish is always a hit in my home. You can use dried beans which I often do, but during the week when I want to make a quick meal, canned beans work perfectly fine. Also works with red beans. Serve over rice.
