Grilled Cumin Spiced Pork Tenderloin
Summer parties and dining al fresco doesn't get more convenient than this – lean pork tenderloin seasoned with a quick, flavorful rub then grilled to perfection served with the easiest salad ever!!
I love having my friends over in the summer for BBQs, but I don't love spending hours in the kitchen. Instead I prefer to keep things simple so I can actually enjoy my company, which is why I love these new DeLallo SaladSavors.
If you're not familiar with DeLallo; I first discovered them last year. They are the only brand of whole wheat pasta my family will actually eat, but they sell tons of other quality ingredients like olive oils, vinegars, olives, roasted peppers, marinated artichokes and more. So it only makes sense that they took those ingredients and conveniently packaged them to create quick and easy salads – all you do is add the lettuce!

Veggie Ham Egg and Cheese Bake
For an easy brunch recipe to serve for a large gathering, try this wonderful savory egg dish; made with part whole eggs, part whites, mushrooms, broccoli, bell peppers, scallions, tomatoes, ham and cheese.
You can modify this however you wish – swap the ham for lean sausage or leave it out. Swap the cheddar for mozzarella or leave it out for dairy-free. As for the vegetables, use whatever you prefer, no rules here!
My sister in law Denise recently made something very similar to this at a brunch she hosted and I knew I wanted to remake it (just a bit lighter). Her recipe called for flour but I tested it without and it worked fine, plus I swapped some of the eggs for egg whites, added a lot more veggies and use reduced fat cheese. This turned out wonderful, and you can prep it ahead and bake when your guests arrive. Enjoy!

Fruit Pizza
Need a colorful dessert idea for Mother's Day? Try these lightened up white chocolate cookie bars topped with cream cheese frosting and fresh fruit. The perfect dessert for Spring or Summer!
I brought these to my daughter's class party yesterday and shared a photo on my Instagram and everyone wanted the recipe, so here it is! You can use any fruit you like, I usually use my favorites and try to keep it colorful but if you don't feel like cutting fruit, just use berries! You may notice some of the photos pictured here don't have white chocolate chips, that's because I tried it both ways and liked it better WITH the white chocolate, but if you're not a fan of white chocolate you can leave them out and increase the sugar slightly. The recipe below and nutritional info includes the white chocolate.

Canned Tuna Ceviche
Transform ordinary canned tuna into a zesty, flavorful lunch with a Latin flair by adding fresh lime juice, cilantro, jalapeño, tomato and avocado – so good!
A high school friend (hi Cynthia!) actually gave me this idea. She had it while vacationing in Guatemala and shared the idea with me when she returned. When I read the email, I thought it was brilliant! It's basically a poor man's ceviche.
Now don't get me wrong, I LOVE a good fresh ceviche made raw fish or seafood. It's actually one of my favorite things to eat. I actually shared a recipe here of Ceviche in Cucumber Cups or this ceviche-like Zesty Lime Shrimp and Avocado Salad. But when you need a quick lunch using pantry ingredients, this is great and it's inexpensive, low-carb, paleo-friendly, dairy-free and gluten-free!
For presentation, I put the ceviche tuna into the can to use as a ring mold, then inverted it onto my plate; completely optional of course! Topped with fresh avocado, this was filling and delicious.

Greek Nachos
A lighter, healthier Greek twist on traditional nachos – made with whole wheat pita chips, hummus, cucumbers, tomatoes and feta.
I was asked to do a book review for the paperback book Snack Girl To The Rescue: Easy, Delicious Food for Breakfast, Lunch & Dinner. This book is a weight loss book as well as a cookbook, and although there are no photos, Lisa gives practical advice on getting healthy along with a bit of humor. The book has 100 recipes for breakfast, lunch and dinner, but I thought I would try one of her snacks, because after all, she's Snack Girl, right?
This was super easy to make would even work as a light vegetarian lunch. Next time I make this, I might even add some Kalamata olives and bell peppers. Enjoy!

PB2 Flourless Chocolate Brownies
These brownies are pretty amazing! Made with PB2 (powdered peanut butter) instead of flour plus cocoa powder, raw honey and chocolate chips – moist and delicious, you won't believe they're only around 130 calories each!
I'm not a baker. Baking is an edible science that requires accuracy and precision. It requires the perfect balance between flours, leaveners, fats, and liquids. When I bake, I feel more like a mad scientist because I break all the rules. So when something actually works and turns out awesome, I'll be honest, I'm often surprised! These brownies are the perfect example – no flour, no oil or butter, but they are amazing (happy dance)! And the best part, you don't need a fancy mixer. I mixed this all by hand in a large bowl with a whisk and a spatula.
If you've never heard of PB2, it's basically a powdered peanut butter with 85% less fat. You add a little water to make it a spreadable peanut butter. I personally prefer real peanut butter if I'm spreading it on toast, but for baking and adding to smoothies, PB2 is excellent. I used to buy it on Amazon, but now I see it in my local supermarket. Here's the Amazon link if you can't find it near you.
Moist, chocolatey and delicious, you will LOVE them! They also happen to be gluten-free, and if you use dairy-free chips they can be dairy-free as well. If you have nut allergies however, these are not for you. But my other brownie recipe called: Amazing Flourless Brownies are your nut-free answer. Those are made with black beans instead of flour but I swear, you'll never know! Both recipes are great yet different. Curious to see which you like best!

Carrot "Rice" Leek Risotto with Bacon

First off, ever since I started food blogging, I’ve been a fan of Skinnytaste. Now, I’m not just saying that because Gina kindly let me share a recipe here today. When you first start off as a healthy food blogger, you can’t help but discover Skinnytaste and immediately start drooling. Needless to say, she’s been an inspiration to me from the beginning. In June 2013, I started my food blog, Inspiralized. Inspiralized is a blog dedicated to cooking with spiralized vegetables. Yes, that’s right. All of my recipes use vegetable noodles! Imagine my happy surprise when I saw Gina’s Zoodles and Meatballs, her Asian Turkey Meatballs and Zoodles with Lime Sesame Dipping Sauce and her Zoodles with Lemon Garlic Shrimp. Somewhere along those lines, she mentioned that she was on a “zoodle kick.” Welcome to my world, Gina!
Like me, Gina wanted to share that spiralized veggies (noodles made of vegetables using a spiralizer) are a healthy, Paleo, gluten-free, unprocessed alternative to regular pasta. Of course, these noodles can also similarly be made with a mandolin or julienne, if you don’t happen to own a spiralizer. Aside from spiralizing zucchinis, there are many other vegetables that can be turned into noodles. Actually, spiralizing is a great way to eat seasonally. For example, over at Inspiralized, I made a lot of butternut squash and sweet potato noodles this winter. While these veggie noodles allow us to make hearty bowls of low-calorie and low-carb pasta, they can also be turned into rice! By simply placing your spiralized vegetables into a food processor and pulsing for a few seconds, the noodles are transformed into rice-like “bits,” perfect for using as rice.

Creamy Asparagus Leek Soup with Creme Fraiche
Keeping things green today in the spirit of St Patrick's Day! Cream of asparagus is one of my favorite Spring soups. The addition of leeks, a relative of onions, scallions and shallots gives this soup a wonderful subtle flavor. But the star here is a touch of creme fraiche added on top, which I like to swirl in to my soup for a creamy delicious finish.
My daughter Madison loves helping me in the kitchen, here I let her snap off the tough ends of the asparagus – she's a pro!
Creme fraiche is wonderfully creamy, and a bit thinner than sour cream. If that's not available near you can swap it for sour cream or even Greek yogurt. If you want to go dairy-free, you can of course leave it out, it will still taste wonderful. Enjoy!

Bell Pepper and Potato Frittata
Egg frittatas are my answer to an easy, inexpensive meal solution whether I'm having it for breakfast, lunch or dinner. For breakfast, I'll serve this with a side of berries or fruit. For dinner, I make a salad on the side and call it a meal!
You can literally throw anything into a frittata and call it a meal, but I thought it would be fun to make this one a St Patricks Day theme which of coarse MUST have yukon gold potatoes, and to create a shamrock design, I sliced my bell peppers into flower shapes – completely optional! This one's vegetarian, perfect if you need a meatless Monday dish idea, and it's naturally gluten-free.
I'm not sure if there's anything quite as beautiful as farm fresh eggs. A friend of mine is raising chickens in her yard and gave me some of her eggs and the colors were so beautiful I almost didn't want to crack them. The yolks are so orange, it's hard to believe I made this frittata with half egg whites.

Whole Wheat Irish Soda Bread Muffins
These whole wheat Irish soda bread muffins are delicious, the perfect start a lazy cold March Sunday morning. Speckled with raisins, they are sweet and perfect enjoyed with a hot cup of tea.
Plus, making them in muffin tins is perfect for better portion control. I first posted these back in 2010, and almost forgot just how good these were! I used a combination of King Arthur unbleached white whole wheat flour with unbleached all purpose flour, and the flavor and texture was perfect – they don't taste whole wheat at all. If you like caraway seeds in your bread, you can add about an eighth of a teaspoon.

Low Fat Peanut Butter Banana Muffins
Sunday mornings are a little better when I make these deliciously moist muffins. These muffins make a regular appearance in my home whenever I have ripe bananas I need to use up. Everyone loves them around here – if you try them you'll know why!
I resurrected this recipe from the archives for those of you who haven't tried these yet. They are so good, and quite popular here. When I first created this recipe, I found the best way to get the peanut butter taste without the added fat was to use use Better'n Peanut Butter

Amazing Flour-less Brownies
Moist, chocolatey and delicious – finally a low-fat, gluten-free brownie that's pretty darn good!
I can't get over how good these brownies taste considering they're made with no flour and no butter. Yet they're not cakie or dry like most low fat brownies I've tried. I found the original recipe last year on the Roasted Root, which I adapted and have made many times since.
The secret ingredient is black beans, and I'm sure you're thinking… what? But trust me, you don't taste it! My husband even loves them, and can't get over how good they are (and trust me if he didn't like it he would tell me). They really feel like you're eating something loaded with butter, yet it only uses 1/2 teaspoon of oil. The last version I added some walnuts which increased the points to 5 each, but I gave you the basic recipe without.

Spaghetti Squash with Arugula Pesto
Hi guys! Just wanted to share an easy recipe I had for lunch today made with spaghetti squash and pesto. This took less than 15 minutes to make and was delicious.

Three Cheese Tortellini and Mushroom Soup
I'm working on my manuscript edits this week for my upcoming cookbook, so I thought I would share this delicious soup from the archives!
This is one delicious bowl of soup! Warm and satisfying, with tortellini in every bite. Top this with some fresh shaved Parmigiano Reggiano and you'll experience a wonderful unami taste sensation.
Soup is the perfect one pot meal. Vegetarians can swap out the chicken broth for vegetable broth (also perfect for Meatless Mondays). Using the rind from the Parmigiano Reggiano cheese is optional, but if you have it I recommend using it, it adds so much depth and flavor.
And a little nutritional tidbit about mushrooms, courtesy of registered dietician, Heather K Jones. This veggie has achieved superfood status and with good reason. It’s loaded with important vitamins and minerals, including heart-protecting copper, B vitamins and antioxidants. These fabulous fungus come in a lot of different varieties and are very versatile.
Heather has generously offered to provide nutritional tidbits on lots of the fruits and vegetables I use in my future recipes. Call me a geek, but I love knowing what I'm eating is not only delicious, but is benefiting my health as well.
I'm sure most of you know I am currently working on my first cookbook, but I'm not sure if you all know that Heather K Jones is working with me on this book. Heather is a great asset to Skinnytaste and has written and contributed to many books for Self, Prevention, Good Housekeeping, and more. She is my go-to person when I have a nutritional question and has posted some great articles on Skinny Bits including The Skinny On Sweeteners.

Spinach and Feta Stuffed Chicken Breasts
Chicken cutlets stuffed with spinach, feta and ricotta, then breaded and baked to perfection!
I love making stuffed chicken breast as many as you probably figured out by now. You can stuff chicken with just about anything, and leftovers can be frozen and reheated for your very own homemade frozen meals which are so much better than store bought.
I first experimented with this spinach-feta version back in 2010, and we loved it. My photos were pretty awful back then, so today I decided to make them over! I also changed the recipe slightly to make them easier. Anyone can make these, there are no toothpicks required and the prep time is fairly quick. I served this with a great big salad on the side, but you can also serve it with couscous, rice or quinoa.

Chicken Pot Pie Soup
The taste of chicken pot pie, in a soup!
It's a blizzard here today and I'm snowed in! No worries, I have all the ingredients to make this soup and I thought I would share this popular recipe from the archives for those of you who are new followers. Hopefully you'll be inspired to make it this week for your family, trust me you'll be glad you did!
Chicken pot pie is ultimate comfort food and this creamy, chunky soup is loaded with chicken, potatoes, mushrooms, peas, carrots, corn, celery, onions and green beans in every bite. You can modify this with the vegetables you like to suit your taste. If you want to get fancy, you can serve this in hollowed out bread bowls or serve it with cut-out baked pie crust (extra points), but I often make them with these Easy Garlic Cheddar Biscuits.
This recipe requires cooked chicken breast. If you have raw chicken, poach 3 breasts in water for 15 minutes, then remove and dice into bite-sized pieces. This soup is super filling! One cup fills me up, but if you want a larger serving, I posted nutritional info for a larger bowl as well.
Leftovers make a great lunch!!

Vanilla Bean Panna Cotta with Strawberries
Vanilla beans, strawberries and cream make this luscious dessert worthy of a standing O!
Panna cotta is one of my FAVORITE desserts when prepared properly. It’s such an easy dessert to make and it can easily be adapted with many different flavor profiles. Although it's usually made very rich with heavy cream, I've been able to play around with the ingredients through the years to give this dessert that same lusciousness, yet using much less cream.
If you need a dessert this Holiday season to impress your guests, I promise, this one is it! And since it needs at least four to five hours to set it's the perfect dessert to make a day or two ahead.
I've tried so many panna cotta recipes from blogs through the years that looked so beautiful, only to be disappointed. Perhaps I'm a bit of panna cotta snob, because I know what a good panna cotta should taste like. It shouldn't have the texture of jello, instead it should be creamy and smooth, almost pudding like in texture. I've tested this particular recipe FIVE times to get it perfect, so if you plan on trying this – don't change a thing!
For diabetics, yes, this will work with Splenda or other sweeteners, and of course cut back on even more calories. So go grab a spoon and savor each spoonful of this vanilla treat.

Skinny Cranberry Bliss Bars
A blondie cookie bar with chunks of white chocolate chips and dried cranberries, topped with sweet cream cheese icing, tart dried cranberries and white chocolate drizzle – perfect for the holidays!
I got a request this year to lighten Starbuck's Cranberry Bliss Bars – this make-over turned out excellent! I was able to cut the fat and calories by more than HALF, yet they still taste indulgent. The original bar is 340 calories with 19 grams of fat; this lighter version is just 149 calories with 5 grams of fat (4 points plus).
Last year I attempted to make these light but didn't have much success. I had used whole wheat flour and I believe that was my demise – it gave the bars an unpleasant texture and scent that I really didn't enjoy.
This time I used Gold Metal all purpose flour and the results were excellent. This is dessert after all, and although I try to use whole grains in all my meals, it doesn't always work when baking. If you need a dessert for a holiday party, these are great. Leave them refrigerated until ready to serve.
