Spiralized Greek Cucumber Salad with Lemon and Feta
This light cucumber Greek salad is the perfect meatless summer dish. Trust me, you're going to want to make this all summer long! Fresh cucumber, tomatoes, bell pepper, olives, red onion, oregano, lemon juice, olive oil, and fresh feta – it's filling, high in fiber and protein, perfect for lunch or dinner!
I had some fresh Feta leftover from my Lemon Feta Drumsticks, and I've been craving a good Greek Salad, but I wanted to make it without the lettuce and make cucumber the star of the show. This turned out better than I could have imagined! I used my favorite cooking gadget – my the Paderno Spiral Vegetable Slicer with the chipper blade to quickly whip this up into beautiful spirals and the results were a salad that's crunchy and bright, and not weighed down by a heavy dressing. This took me less than 10 minutes start to finish – win!
If you don't own a spiralizer you can just dice the cucumbers with knife and make it a chopped Greek salad instead. I highly recommend using a decent Feta cheese, not a fat free Feta.
A great Meatless Monday meal. If you are making this ahead for lunch for work, you can leave the lemon juice and olive oil out, and pack it on the side, then just add it when you're ready to eat. Enjoy!

Quinoa Tabbouleh + Summer Berry Cobbler from the Skinnytaste Cookbook
I know a lot of you are really excited about The Skinnytaste Cookbook release. Well guess what?, so is Target! So excited in fact that they are carrying my cookbook which is now available for pre-order on Target.com.
The Skinnytaste Cookbook has 150 recipes – 125 of those recipes are brand spanking new and have never been published on my blog. But I gave Target a sneak peak inside the cookbook and shared two exclusive recipes and photos from the book. (photo credit: Penny De Los Santos)
I chose two of my summer favorites so you don't have to wait until September 30th – you can start making them now while the weather's warming up. The Quinoa Tabbouleh tastes so fresh – a perfect summer salad whether you serve this as a main dish or a side dish with grilled chicken or lamb. And this Summer Berry Cobbler – cobbler is my weakness and this is my absolute favorite way to utilize those sweet summer berries.
Did I tease you enough? Well that wasn't my plan... head on over to Target's A Bullseye View and get the full recipes!!!

Spiralized Raw Zucchini Salad with Avocado and Edamame
Fresh, quick and delicious – this salad takes less than 5 minutes to make, start to finish and there's no cooking involved, so it's perfect for the summer because you won't heat up your kitchen!
This salad was inspired by an amazing vegan appetizer I had in Seaside Florida prepared for me by the staff at Raw and Juicy. It was so fresh and simple, I knew I was going to recreate it at home. Rather than dicing the zucchini into perfect little squares, I used my Paderno Spiral Vegetable Slicer (my all time FAVORITE cooking gadget) and spiralized it instead plus I added some cooked shelled edamame sold in the salad section of my supermarket for protein. The results were fresh and fantastic – a MUST try!
And speaking of summer, as shorter hemlines and bathing suit weather approaches, I want to introduce you to my friend Erin Stutland – a life and fitness coach and the creator of Shrink Session: Tone Your Body, Expand Your Mind. She has been featured in Glamour Magazine, Shape, Daily Candy and more and people all over the world are currently experiencing her work.
Erin and I got together last week in her little NYC kitchen to shoot a quick, fun cooking video to demonstrate just how easy this recipe is. Can you believe this is my FIRST cooking video on Skinnytaste? It's not perfect, but I don't think it's terrible for my first time. I plan on doing some more in the future to get more practice, you check it out here...
Erin is a seasoned pro at making videos, and she has also created a workout that is unlike ANYTHING I have ever experienced before. I say that, because frankly, it doesn’t feel like a workout at all. What makes Shrink Session so DIFFERENT from your average workout is that it will definitely tone your bod, amp up your metabolism and burn fat. But it also helps you step into a more a confident, powerful, rock star part of yourself that you may not be in touch with on a daily basis.
Erin is running a FREE 5 day Say it, Sweat it, Get it Challenge that starts June 2nd. You can sign up HERE. Don't miss it. I have no doubt that you are going to fall in love with the workouts and your body!
Hope you enjoy the recipe – it's vegan, vegetarian, dairy-free, gluten-free, clean, and delicious!

Grilled Shrimp and Watermelon Chopped Salad
Chopped romaine tossed with sweet, juicy watermelon, grilled shrimp and goat cheese and a golden balsamic vinaigrette – I'll be making this salad all summer!!
I'm so excited to share this recipe with you, it's so good I plan on making it again for dinner tonight so my husband gets to try it. I put this together in about 20 minutes, so it's perfect for busy weeknights. The dressing is DEE-LICIOUS, I used DeLallo's golden balsamic vinegar, which is made from white grapes rather than red and has a sweetly rich taste – it's fabulous! They sell it at my local supermarket, or you can buy it online, but if you want to use regular balsamic, that would work fine too.
I love watermelon in my salad, mostly because I'm not much of a tomato lover. A few weeks ago while in the airport headed to Seaside Fl, I stopped to grab a bite at Marcus Samuelsson's new restaurant Uptown Brasserie located at the new JFK Delta terminal 4, and ordered a salad just like this. Eating healthier while traveling is getting so much easier these days, a good thing although they also have a Shake Shack which after seeing the calories on the menu, I opted not to try.
Hope you enjoy this salad, I'll be making this one all summer!

Canned Tuna Ceviche
Transform ordinary canned tuna into a zesty, flavorful lunch with a Latin flair by adding fresh lime juice, cilantro, jalapeño, tomato and avocado – so good!
A high school friend (hi Cynthia!) actually gave me this idea. She had it while vacationing in Guatemala and shared the idea with me when she returned. When I read the email, I thought it was brilliant! It's basically a poor man's ceviche.
Now don't get me wrong, I LOVE a good fresh ceviche made raw fish or seafood. It's actually one of my favorite things to eat. I actually shared a recipe here of Ceviche in Cucumber Cups or this ceviche-like Zesty Lime Shrimp and Avocado Salad. But when you need a quick lunch using pantry ingredients, this is great and it's inexpensive, low-carb, paleo-friendly, dairy-free and gluten-free!
For presentation, I put the ceviche tuna into the can to use as a ring mold, then inverted it onto my plate; completely optional of course! Topped with fresh avocado, this was filling and delicious.

Sea Scallops Arugula and Beet Salad
Sweet yellow beets, arugula, goat cheese and sauteed scallops tossed with a honey vinaigrette – this salad is delicious!
A day trip out East inspired this wonderful salad. We spent the day out in Riverhead, Long Island and stopped to eat at a quaint little restaurant overlooking the river called Farm Country Kitchen. I ordered the scallop and beet salad that was sooo good, I knew I had to recreate it. Sea scallops are really easy to make and take only minutes to prepare. You can use precooked beets to make this quicker, but I just boiled them ahead until they softened. If you prefer roasting the beets, that of coarse would work out fine as well. Once the beets are cooked and cooled, the rest of the salad comes together in less than 15 minutes. You can easily halve the recipe if you are cooking for two!

Easy Crock Pot Chicken and Black Bean Taco Salad
This simple slow cooker chicken taco salad is high in fiber and protein which means it's very satisfying – all for under 300 calories. Trust me, you won't miss the tortillas!
I'm on a salad kick now that Spring has sprung. Last week I whipped this salad up for dinner, and it was so good and simple I knew I had to make it again to share. I basically added chicken breasts and black beans to the slow cooker, seasoning it with taco seasonings and topped it with salsa. Doesn't get easier than that! A few hours later I shredded the chicken and combined everything for this wonderful topping to this salad.
I also whipped up some of my favorite zesty avocado cilantro buttermilk dressing for the perfect salad that's so satisfying and super easy to make. Try this for taco Tuesday!

Asparagus Egg and Bacon Salad with Dijon Vinaigrette
I love the combination of this simple salad of asparagus, hard boiled egg and bacon tossed with a Dijon vinaigrette – it has Spring written all over it!
I've been dying for this salad all week. Asparagus and eggs are a match made in heaven, but not just for breakfast, it's great for lunch too! I always keep hard boiled eggs on hand in my fridge to use throughout the week, therefore this salad came together in less than 10 minutes. It's perfect to pack for lunch, and you can easily double or multiply the recipe to feed more. It's also very inexpensive to make, low-carb, high in protein and fiber and perfect for gluten-free and Paleo diets.

Grilled Stone Fruit Salad with Honey Goat Cheese Dressing
Grilled peaches and plums served over baby greens with walnuts and a sweet honey goat cheese dressing, this salad is light and delicious utilizing some of my favorite summer fruits.
While I hate to think of summer as having an expiration date, the fact that it’s coming close to the end has me savoring every last moment. I'm a little excited about the change of seasons, but I always mourn the end of summer. So I'm trying to enjoy every last bit of summer’s bounty.

Orange and Arugula Salad with Red Onion and Gorgonzola
Something about Spring and the warmer weather that puts me in such a GREAT mood. It also makes me crave more salads, and this simple salad is a favorite of mine, I make this all the time for myself.
I love the combination of the sweet, juicy oranges mixed with the peppery arugula and the pungent taste of the creamy Gorgonzola cheese, they work together harmoniously. My husband doesn't agree; he is not a fan of Gorgonzola at all so I usually make this for myself for lunch. If you want to make this for two or four, just multiply the ingredients. If you're like my husband and don't care for Gorgonzola, you could use goat cheese or feta instead.

Lemon Asparagus Couscous Salad with Tomatoes
Pearl couscous (otherwise known as Isreali couscous) tossed with asparagus, tomatoes and lemon juice make a vibrant Spring pasta salad that is perfect for lunch, as a side dish, or even to make as a side dish if you are grilling for Mother's Day this weekend!
I'm not usually a fan of the taste of whole wheat pasta, but I don't mind it when the pasta is a smaller cut like orzo, angel hair and pearl couscous. Yes, for those of you who've never tried pearl couscous, it's basically pasta and I treat as such. I don't follow the directions on the box, instead I boil it in a pot of water like I would with orzo. I just adore the pearl shaped texture and also found it as the perfect shape for my daughter when started eating solid foods.
This salad can be eaten room temperature or chilled, and leftovers are great the next day for lunch.

Southwestern Black Bean Salad
I love making this colorful, salad when the weather warms, it makes enough to feed a crowd and makes a great side dish or appetizer if served with chips. It's also great as a topping for taco salads or served with grilled meat and fresh tortillas.
And BONUS, this salad is low in saturated fat and loaded with antioxidants. A perfect summer side dish for grilled meat, fish or chicken. It's best when you use sweet fresh roasted corn, but if corn is not in season, frozen, thawed corn will work just fine in it's place.

Mediterranean Quinoa Salad
A protein packed salad with Mediterranean flavors – quinoa, cucumbers, tomatoes, kalamata olives, red onion, extra virgin olive oil, fresh lemon and a little feta cheese combined makes a healthy salad with fresh clean ingredients.
I had dinner at my friend Julia's house last week, and she made a similar salad as a side dish which she served with fish although hers didn't have tomatoes or feta (I recall she mentioned she was out). I posted a picture of it on Instagram the other day and got so many requests, most of you mentioning the feta was a must! So I made this for dinner last night, with the feta as you requested.
Have lots of leftovers so I am having a big bowl of this for lunch today! This also makes a great side dish for chicken or fish, perfect for backyard parties and BBQ's (can't wait for the warmer weather!) You can totally adapt this to your taste, leave out what you don't like, add more of what you do like. Easy!

Fiesta Bean Salad
Black beans, chick peas, tomatoes, cilantro and avocado are tossed with a cumin-lime vinaigrette – I love the bright, fresh flavors of this quick and easy salad! Perfect for lunch, Meatless Mondays, or even as a side dish with grilled steak, shrimp or chicken.
Something magical happens when you combine cumin, cilantro and lime juice. I can seriously add this to just about anything and be a happy camper.
I confess that I didn't always like beans in my salads, I think it's a texture thing because I love beans simmered in soups or with rice, but...
...add some avocados, cilantro, red onion, lime juice, and cumin.... this is yumm-y!! What's more it's antioxidant rich, full of heart healthy fats, clean, and high in fiber which keeps you full and satisfied.
This serves four as a main dish, if you prefer to have this as a side dish, then it would easily serve 8.

Grilled Shrimp Avocado Fennel and Orange Salad
Grilled shrimp, slices of avocado, shaved fennel and oranges are served over baby kale and mixed greens then topped with a citrus vinaigrette.
Spring is here, although today you would never know it with this crazy cold weather we are having in New York, but my allergies are kicking in to high gear and confirming that Spring is hear indeed. Just a few more weeks before the warmer weather approaches and I already started switching up my meals from those cozy comfort dishes to lighter salads.
This recipe is for my friend Raquel who texts me photos of her fancy dishes she eats when she dines out, then asks me how to make it. I told her I would try to recreate it for her, but wasn't too excited about the idea of fennel. Because she raved about it so much, I bought all the ingredients anyway and to my surprise, the fennel didn't bother me at all! I think the trick is that I shaved it real thin with my mandoline, and I loved the way it paired with the citrus and the grilled shrimp.
I felt like I was eating dinner at a fancy-shmancy restaurant, and kept thinking what a great dish this would be for Mother's Day. My daughter Madison (yes, my three year old) enjoyed the salad too believe it or not! Here she is on Easter, she's getting so big...
She liked everything except the avocado and baby greens, but ate all the shrimp, oranges and fennel, go figure! I packed the rest for lunch and leftovers tasted just as good as yesterday.
This salad is light and delicious, less than 300 calories, and perfect for Weight Watchers, Clean Eating, Paleo, Gluten-Free, Egg-Free, Dairy-Free, Low-Sodium and I'm sure others dietary restrictions I'm not familiar with. I am starting to label all the Clean Eating and Paleo recipes from my site for those of you who asked for this, you can see them in the column on the right. I have a lot to go through so it will take a while to get through them all.

Italian Antipasto Salad
Chopped romaine hearts, shredded mozzarella, olives, prosciutto, turkey pepperoni, roasted red peppers, cucumbers, tomatoes, pepperoncini and Giardiniera (colorful vegetables in vinegar) – this quick Italian salad requires no cooking, which makes it perfect to whip up or pack for lunch.
Cold antipasto is usually the first course of an Italian meal, which consists of a variety of cold meats, cheeses, olives, roasted peppers, and a variety of colorful vegetables that have been pickled in vinegar known as Giardiniera and pepperoncini. This adds so much flavor to the salad, without tons of calories and because it is so flavorful, you really don't need to add a lot of oil. I make the quick dressing by using some of the vinegar from the jar of the pepperoncini, and just add a touch of olive oil and fresh cracked pepper and finito!
This salad is so adaptable to anyone's taste, I love proscuitto but you can swap it for ham or turkey, or leave it out altogether and add more cheese and olives. Sometimes I also add shredded carrots and sliced mushrooms, whatever you like. The real trick to get the bold flavors is from the pepperoncini and Giardiniera, which are both sold jarred in Italian section of the supermarket and add a lot of flavor to the salad. If you can't find Giardiniera, it's fairly simple to make it yourself, here's a recipe from Smitten Kitchen.
I made this salad for one, but it can easily be multiplied for 2 or 4. One note, this is not low in sodium, because of the meats, olives and cheese, so if you're watching your sodium, opt for low sodium ham, cheese and make your own pickled vegetables.

Southwestern Black Bean, Quinoa and Mango Medley
Happy Monday, hope everyone had a nice weekend. Today is the first day of April and Spring is in the air! I started my morning with a two mile run which felt great, and I thought it would be the perfect day to enjoy this delicious quinoa salad which I am reviving from the archives.
Black beans, sweet mango, and lots of colorful vegetables make a delicious zesty salad that has wonderful texture, color and flavor. Serve this as a side dish at a potluck or enjoy this as a meatless main course with some corn tortillas (perfect for Meatless Mondays!!) Leftovers are perfect for lunch on the go as the flavors only get better the next day.
Packed with vitamin C, vitamin A, fiber, folate, iron and lutein so it's not just tasty, it's good for you.
This recipe is from The Plant-Powered Diet by Sharon Palmer, RD who I met in California on my trip to the Dole Blogger Summit. If you are interested in adding more vegetables and plant-based foods to your diet, this is the book for you.

Homemade Croutons
Healthier homemade croutons made with whole grain bread, Italian seasoning and shredded parmesan cheese. These are so simple to make, with ingredients you probably already have on hand.
I love how the grains in the bread add a nutty texture to the croutons, so much better than white bread!
Once baked you can keep them in a ziplock bag to use for salads or soups (I love croutons in my split pea soup!) Be sure to use shredded Parmesan cheese so it sticks to the croutons when baked in the oven.
For this side salad, I chopped up some tomatoes, cucumbers, red onion and romaine lettuce, and tossed it with my red wine tomato vinaigrette.
