Picadillo Quesadillas


One word... YUM!

I make Crock Pot Picadillo all the time in my house (Madison's number one request), and because it makes so much I like to get creative with my leftovers. I came up with this for lunch one day and my husband said I should put it on the blog, so I thought with Cinco De Mayo coming, it would be fun to do some Cuban-Mexi fusion.


I made a really quick & easy Pico de Gallo to add along with the cheddar jack cheese, the results – delicious!

Kenyan Braised Collard Greens and Ground Beef (Sukuma Wiki)


This Kenyan dish is quick and sooo easy to make – perfect if you're craving something a little more exotic with pretty common ingredients. Sukuma wiki is the Swahili name for collard greens which translates to "push/stretch the week". In East Africa they use collards to stretch out a meal so it lasts the whole week, so as you can imagine this dish is very economical.

I'm super excited to share this recipe from my friend Russ's new cookbook, The Ancestral Table: Traditional Recipes for a Paleo Lifestyle. His cookbook has tons of great International recipes each with a bit of history to go along for each dish as well as stunning photography.


Many of you asked me if I am now going Paleo, and the answer is no. But that doesn't mean I can't enjoy meals that are Paleo-friendly and his book has so many exotic dishes I plan on trying soon. I met Russ of the Domestic Man on a tour of the Culinary Institute in the Fall where we cooked side by side in one of their classrooms. We were both working on our first cookbooks, so while we shared our experience together a kitchen together, we also shared stories of food, writing and more. Hope you enjoy this dish!

Crock Pot Carne Guisada (Latin Beef Stew)


Slow cooked Latin beef stew with baby red potatoes and Latin seasonings. Serve this topped with fresh aji picante – it's is a must and really brightens the flavors and rounds out the dish!


Last week I was on a cruise to the Bahamas from New York having fun in the sun. I was hoping to return to Spring weather but so far March is starting off really cold in New York. This Latin beef stew is the perfect way to warm up and it's a favorite in my home. A bit different than traditional beef stew because the meat and potatoes simmer with light beer, scallions, garlic, tomatoes, cumin, achiote (also known as annato) and spices. If you can't find achiote which is traditionally used in Latin cuisine and can be purchased at any Latin market or on Amazon, no worries, you can use Badia Sazon or even sweet paprika instead. If you prefer to make this without beer, you can replace it with water, it will still taste great.

I usually make it on the stove, but with some minor adjustments I was able to make this in the slow cooker. If you don't have a slow cooker you can see the stove top recipe here. Pictured here I served this over brown rice with some avocado on the side. Enjoy!

Perfect Filet Mignon for Two


As a steak lover, I can't think of a better meal to enjoy for Valentine's Day.
Since it can be pricey, I only make it on special ocassions – and Valentine's Day is the perfect occasion! Get sizzling in the kitchen for an easy, Romantic dinner for two.


Filet mignon is the most tender cut of steak you can buy, and doesn't require fancy seasonings – coarse salt and fresh cracked pepper is all you need for a delicious steak that's pan seared then finished in the oven and cooked to perfection! I like mine medium rare, but you can cook it to your taste.

It's practically foolproof if you have a meat thermometer, but you can also use the finger test just in case you don't. This starts on the stove and finishes in the oven, so you'll need a heavy oven-safe non-stick skillet, or cast iron skillet to make this. One thing you should keep in mind is you'll want to bring the meat up to room temperature, so let it sit on the counter at least 30 minutes before you're ready to cook. It's perfect with sauteed or roasted vegetables on the side, here I made a quick sauteed garlic broccolini, but you can also serve it with skinny mashed potatoes.

Slow Cooker French Dip Sandwiches with Caramelized Onions


If the thought of a hot sandwich filled with beef,  melted cheese, caramelized onions and peppers served with beef broth for dipping sound appealing, you NEED to make these!


These sandwiches make the perfect game day meal, start this early in the morning because you'll need 9 to 12 hours, depending on the size of your roast. You can even serve them as sliders by serving them on dinner rolls.


Ever since I got my hands on the The Recipe Girl Cookbook: Dishing Out the Best Recipes for Entertaining and Every Day, I've had my eye on this recipe because I love a good French Dip! To be honest, I've never made roast beef in the slow cooker, because I love my roast beef in the oven, cooked to medium rare. But I took a chance because I was curious and made this yesterday. Smelled so good simmering all day and when it was ready I made myself a sandwich… it was awesome!


My husband came home from work hungry and I made him a sandwich, and he LOVED it! I didn't have to do much to her recipe to make it light, I just used whole grain bread (tried with both whole wheat baguette and whole wheat 100 calorie potato rolls) and I used portion control and they were perfectly satisfying. I highly recommend making the onions and peppers, in my opinion they make the sandwich!

I've known Lori (aka Recipe Girl) for quite a few years, we first met on Twitter, then in person a few times and recently spent a weekend away at the Better Blog Retreat in Park City, Utah along with a few other lovely ladies. Lori is pictured on my left.


The recipes in her book are perfect for entertaining and she includes menu ideas from everything from football parties, romantic dinners for two, holiday parties, tailgating parties and more, or you can just serve them up any night of the week.

Because this can make several servings depending on the size of the roast you purchase, and the appetites of your guests I am leaving out the serving size and calculating the nutrition based on one sandwich using a whole wheat baguette.

I shared this delicious homemade salsa verde recipe for Better Homes and Gardens on Delish Dish and decided to make these burgers using the salsa for dinner last night. You can also use store bought salsa verde, but trust me, nothing beats homemade!

I made the burgers with both lean beef burgers and chicken burgers since I had both on hand, and I loved them equally.  My husband's not eating carbs this week so he ate two beef burgers without the bun. Whether you make them with lean beef, turkey, chicken, buffalo, black bean patties, veggie burgers... modify them however you wish!

I calculated these with 93% lean beef patties, with the bun and without and with the bun and no cheese. Any other variations you'll have to do on your own – enjoy!

Loaded Philly Cheesesteak Baked Potato

I've had this idea for a while, and finally made it for dinner to test it out – start to finish this took 20 minutes and it was so good! I used a full fat provolone cheese, because I wanted the cheese to melt nice, after all this is a cheese steak and at 8 points plus for the whole meal I was able to splurge. If you want to use reduced fat, that's totally up to you, you'll save 1 point.

Can you do this with sweet potato? Of coarse you can! But I thought russet would pair perfect with the steak and just to clear up the confusion, white potatoes aren't all that bad for you. Potatoes are have gotten a bad rap as a white starchy food, but when they're not drowning in butter or deep fried as french fries, they are actually a healthy, low calorie, high fiber food and a good source of vitamin B6, vitamin C, copper, potassium and manganese. They also contain a variety of phytonutrients that have antioxidant activity so if you want to stick with a traditional baked potato, it's OK!

Skinny Tip: If you buy bag of russet potatoes, the potatoes are much smaller than the ones they sell individually, they average about 5 to 6 oz each.

Stuffed Pepper Soup

Easy, kid friendly soup

Bell peppers, chopped tomatoes and lean ground beef are simmered in broth with onions and garlic, then topped with brown rice – everything you love about stuffed peppers, in a soup!

I love soup weather – and the convenience of a making a big pot of soup that can serve as several meals. I first posted this recipe back in 2011 and it's been a huge hit with everyone, including both of my kids –  they just loved it! I decided to make a pot this weekend and gave this a photo makeover.


This is a hearty bowl of soup that will fill you up and warm you on a chillynight. I guess you can call this a lazy stuffed pepper because it tastes just like a stuffed pepper without all the extra work. Topped with brown rice it's a satisfying meal. Heck, if you wanted you could even make this with ground turkey, and top it with shredded cheese. Have fun with this one!

Spaghetti Squash with Meat Ragu

 
Roasted Spaghetti squash topped with a simple-yet-delicious meat sauce simmered with tomatoes, onions, carrots and celery.


I originally posted this recipe way back in 2009, before I owned a decent camera and I just had to give this a photo makeover (the photo was so bad I'm surprised anyone made it at all). It's so darn good you won't miss the pasta, and think of all the calories you're saving by making the swap! It's also low-carb, clean, gluten-free and perfect for my paleo followers out there too!


The beauty of this dish is you can totally make this family friendly. I know my kids prefer to have their meat sauce with pasta (plus they need their carbs too) so I cook some pasta for them and serve this with spaghetti squash for my husband and I. It's a very generous amount and extremely satisfying.


Of course, you can swap the beef for turkey if you wish, and you can certainly make the spaghetti squash in the microwave which is so much quicker. The sauce can be frozen for a later date and reheated when for a busier night. I've never tried freezing spaghetti squash, anyone out there know if I can? So there you go, a meal that can make the whole family happy – gotta love that!

Roast Beef Sandwich with Melted Cheese and Caramelized Onions


I wish this photo could capture how delicious this sandwich is. I made a few attempts at photographing this, but the photo can't capture how sweet these caramelized onions are and how perfect they taste with yesterday's leftover garlic infused roast beef and melted Swiss cheese.


Father's Day is coming up and I'm trying to think of dishes that would make Dad happy. For those of you who are Pinterest obsessed, I made a Skinny Father's Day board and pinned recipes I think Dads would love. My husband loves caramelized onions, I can't say I blame him. I never knew just how good they were until I met him; he makes them all the time. The onions shrink to about half their size when the slowly cook down, and as they turn golden in color they turn sweet and delicious. They are great over burgers too, I make them with a lot less oil than he does with great results.


I don't east sandwiches often, maybe once a week. But when I do eat a sandwich, my bread of choice is a fresh baked whole wheat French or Italian bread from the bakery because it's generally made with no fat and I love a crispy fresh baked loaf.

Garlic Lover's Roast Beef



Vampires beware, there's garlic in every bite! And if that's not enough garlic, I like to serve this with roasted broccoli with smashed garlic and skinny mashed potatoes... in my house, there's never too much garlic.


With Father's Day right around the corner, I thought it was time to re-shoot this recipe which means this is what's for dinner tonight. I make roast beef quite often in my house because it's pretty simple to make and we all love it. Roast beef is really hard to mess up as long as you have a meat thermometer and you let it rest before slicing.

For lunch today I made a delicious carved roast beef sandwich with melted cheese and sweet caramelized onions that I will be sharing tomorrow here, it was sooo good!

Grilled Hawaiian Teriyaki Burger


If you're looking for a new way to enjoy a burger, then I think you'll love this Hawaiian inspired teriyaki burger made with Laura's Lean ground beef, carrots, scallions and topped with a homemade pineapple teriyaki sauce and a grilled pineapple.

Last weekend I spent four days in Disney World with my husband and youngest daughter Madison. I attended the Food Blog Forum which was truly inspirational, and we stayed at the Grand Floridian Resort which was a lovely place to stay. One of those nights we ate dinner at the Kona Cafe at Disney's Polynesian Resort, where I had a delicious teriyaki steak topped with pineapple; which was the inspiration for this burger recipe.
 

I did a little research into what goes into a Hawaian teriyaki sauce, and after reading many recipes I came up with my own version which was so good, this will certainly be a regular. You could of course buy teriyaki marinade to speed this up, but making it from scratch tastes sooo much better.

I'm a huge fan of Laura's Lean Beef, because it's low in fat and saturated fat, and free of hormones and antibiotics, which is important to me when choosing meat. Their beef is available in many supermarkets, and I even found it at Target. And I just have to share this contraption that easily cuts pineapple into perfect rings. My girlfriend Gabbie bought this for me a few years ago, and I love it; it's called the Pineapple Easy Slicer. It's simple to use and it's awesome. If you prefer canned pineapple, be sure it's packed in juice and not syrup.

By the way, this is also great without the bun if you're watching your carbs, just serve it on a bed of lettuce and drizzle the teriyaki sauce on top. Without the bun, the burgers are Weight Watchers 6 points plus.

Corned Beef and Cabbage Soup


It's a cold snowy March day, perfect for this soup! Cabbage, potatoes, bell pepper and aromatics simmered on the stove with corned beef create this wonderful one pot meal. A fun twist on a Classic Irish dish!

I thought this was a great way to enjoy corned beef and incorporating lots of vegetables. A few notes: I purchased a 2 1/2 lb piece or corned beef brisket. After I trimmed all the fat off it was 2 lbs. I boiled all the beef in the soup which shrunk to 18 oz, but only used half (9 oz cooked) of the corned beef in the soup and used the other half in another recipe.

Cheeseburger Casserole


If you're a cheeseburger lover, and the thought of ground beef, tomatoes, pickles and cheese tickles your fancy, then this truly American, comforting casserole is for you!

I was recently given the Bobby Deen: From Mama's Table to Mine cookbook as a gift. Bobby, in case you're not familiar is Paula Deen's son, who makes his Mama's Southern dishes a bit healthier and on the lighter side.


Whenever I get a cookbook, I usually attempt a dish that's out of my norm. A cheeseburger casserole... now that's not a dish I grew up eating!

What the heck is a cheeseburger casserole? Think cheeseburger essential ingredients such as lean ground hamburger meat sauteed with diced tomatoes, onions, a touch of mustard, and some not-so common burger ingredients such as pasta, all topped with melted cheddar and finished off with diced pickles.


My toddler gobbled this up, and I thought it was pretty darn good – and I would certainly make this again. I'm sure you can have fun with this and add your favorite cheeseburger toppings. I'm thinking sauteed mushrooms would be really good here too and maybe a few bacon crumbles for a bacon cheeseburger casserole (why not!).

The one thing I changed was the serving size, I thought 9 servings was a little more realistic than 12 for adults, and at about 260 calories (7 points plus if you're on Weight Watchers) it's still well under 300 calories.

Crock Pot Picadillo Stuffed Peppers

 

Leftover picadillo and brown rice makes a super easy second meal, all in the crock pot. Top it with melted cheddar or Monterey Jack cheese and you'll have a delicious dinner without much fuss. Each pepper is a complete meal-in-one.
As I mentioned in my last post, we use leftover picadillo many ways in my home. Stuffed peppers are a great way to use leftovers and nothing goes to waste here –  the tops of the peppers get diced and are added to the filling.


The slow cooker is the perfect appliance for making stuffed peppers, I've also included oven directions below.

When buying bell peppers for the slow cooker, I look for peppers that have flat bottoms that can stand upright on their own.


You can double the recipe to make 6, which would fit perfectly in a 6 qt slow cooker.

Crock Pot Picadillo

 

Picadillo, a flavorful Cuban dish made with ground beef and a sauce made from simmering tomatoes, green olives, bell peppers, cumin, and spices is one of my family's favorite weeknight meals.

Trust me on this one, if you want a recipe the whole family will love, this is it! I grew up on this dish and my friends used to love eating over when my mom made it for dinner. This was probably one of the first recipes I ever learned how to cook and I make it at least once a month, although usually on the stove. (stove top version here) It's inexpensive, kid-friendly, freezer friendly and gluten-free.


I knew this would adapt nicely for the slow cooker, and I was right! In fact, I think it's even better since the lean beef cooks longer and becomes very tender the longer it simmers.

This makes a lot, so you'll get several meals out of it. We serve it over brown rice, we make tacos with the leftovers, and I am going to post a second recipe using the leftovers. Don't you love a recipe that can serve as two different meals!

Anytime you use ground beef in the crock pot, you'll need to brown it first on the stove. Since the skillet is already out, I threw the onions, peppers and garlic in with the meat to let the flavors bloom.

If you want to prep this the night before, the meat is fully cooked, so you can add all the ingredients into the crock pot, then refrigerate. The next morning plug it in and go to work, or go on with your day. When you come home, you'll just have to make some rice and a salad and dinner is ready!

By the way, lean beef is the meat of choice for this dish in my house, but you can also use lean bison or ground turkey if desired. Raisins are commonly added to this dish, but we prefer this without.

Beef Barley Soup


A hearty bowl of soup made with carrots, celery, onions, lean beef and pearl barley.

When I was a kid, we had soup for dinner almost every night. Sometimes we had a bowl as a first course, and other times as a main dish. I wasn't always very happy about this, because believe it or not I was a very picky kid. But when my Mom served Beef Barley, I never complained.

This soup is perfect for the cooler evenings as we head into Fall. It's a one pot meal that's really simple to make, but it takes a little over an hour for the meat to get tender, so keep that in mind if you're pressed for time. The pressure cooker is perfect to speed this up, I've also included instructions if you own one.

I wasn't sure what my toddler would think, but I fed it to her anyway and to my surprise she ate it. Leftovers only get better and make a great lunches; this also freezes great if you want to make freezer meals for the month. To make this soup gluten-free, you can sub the barley for quinoa.

Grilled Flank Steak with Black Beans Corn and Tomatoes



This steak dish has a fiesta of flavors, the flank steak is seasoned with cumin and garlic and grilled to perfection, then topped with a fresh black bean, corn and tomato salad for a quick and tasty family friendly weeknight meal.


I love topping grilled meats with fresh salad, a few successful examples of this: Grilled Flank with Tomatoes Red Onion and Balsamic, and Grilled Chicken Bruschetta.

In this Tex Mex version, the flavors can be easily tweaked to suit your family's taste, make it spicy with some chopped jalapenõs, or swap out an ingredient for those picky kids. Enjoy!
