Avocado Coconut Popsicles


These creamy popsicles are a real treat! Made with just 4 ingredients – nutrient dense avocados, coconut-almond milk, raw sugar and sweetened coconut flakes. They are also dairy-free, vegan, vegetarian and gluten-free.

It’s no secret, I'm pretty avocado obsessed! I grew up eating avocados all my life and I usually incorporate them into a meal just about every day! In fact, I love them so much I created an entire Pinterest Board devoted to avocados. But I usually eat them in some type of savory dish such as guacamole, BLT, egg salad, in my salad dressings, with my soups and more.

But the fact is, in Brazil where my Dad lived for many years, avocados were never eaten with salt; instead they were treated as the fruit that they are and were often sweetened with sugar. My dad used to make a smoothie years ago with avocados, milk and sugar which he called Vitamina. Because I love coconut, I took his smoothie idea and added coconut flakes and loved it! And since avocados are so nutrient dense, you're also getting a good dose of healthy fats, vitamins and minerals to boot!

PB2 Flourless Chocolate Brownies

I replaced the flour with PB2 (powdered peanut butter). So moist, and no flour! Less than 135 calories each! #glutenfree

These brownies are pretty amazing! Made with PB2 (powdered peanut butter) instead of flour plus cocoa powder, raw honey and chocolate chips – moist and delicious, you won't believe they're only around 130 calories each!


I'm not a baker. Baking is an edible science that requires accuracy and precision. It requires the perfect balance between flours, leaveners, fats, and liquids. When I bake, I feel more like a mad scientist because I break all the rules. So when something actually works and turns out awesome, I'll be honest, I'm often surprised! These brownies are the perfect example – no flour, no oil or butter, but they are amazing (happy dance)! And the best part, you don't need a fancy mixer. I mixed this all by hand in a large bowl with a whisk and a spatula.

If you've never heard of PB2, it's basically a powdered peanut butter with 85% less fat. You add a little water to make it a spreadable peanut butter. I personally prefer real peanut butter if I'm spreading it on toast, but for baking and adding to smoothies, PB2 is excellent. I used to buy it on Amazon, but now I see it in my local supermarket. Moist, chocolatey and delicious, you will LOVE them! They also happen to be gluten-free, and if you use dairy-free chips they can be dairy-free as well. If you have nut allergies however, these are not for you. But my other brownie recipe called: Amazing Flourless Brownies are your nut-free answer. Those are made with black beans instead of flour but I swear, you'll never know! Both recipes are great yet different. Curious to see which you like best!

Cauliflower "Fried Rice"


I LOVE fried rice, and often make my own fried rice at home with brown rice which is delicious. But sometimes when I want to cut down on my carbs, I opt for cauliflower rice.

I posted this Cilantro Lime Cauliflower "Rice" a while back, and it was a huge hit. So I decided to play around with that recipe and make this Asian version to go with the Orange Chicken I posted yesterday, and my husband (who detests cauliflower) was pretty amazed how the meal turned out. The portions are generous and you get a serving or two of vegetables into your diet.

Creamy Asparagus Leek Soup with Creme Fraiche

A delicious, creamy asparagus soup.

Keeping things green today in the spirit of St Patrick's Day! Cream of asparagus is one of my favorite Spring soups. The addition of leeks, a relative of onions, scallions and shallots gives this soup a wonderful subtle flavor. But the star here is a touch of creme fraiche added on top, which I like to swirl in to my soup for a creamy delicious finish.


My daughter Madison loves helping me in the kitchen, here I let her snap off the tough ends of the asparagus – she's a pro!

Creme fraiche is wonderfully creamy, and a bit thinner than sour cream. If that's not available near you can swap it for sour cream or even Greek yogurt. If you want to go dairy-free, you can of course leave it out, it will still taste wonderful. Enjoy!

Cauliflower Fritters



This is a delicious way to prepare cauliflower. It's similar to the taste of a potato pancake and makes a fabulous side dish – your kids will love them!

My Sicilian friend Julia is a wonderful cook. I remember the first meal I ate in her NYC apartment; lamb chops and fried cauliflower which she calls broccoli a pasteta. She joked that day you can fry a sponge and it would taste good – she's probably right. These are a lightened version of her recipe, made with Pecorino Romano, parsley, egg, garlic, white whole wheat flour and just enough oil to saute them in a pan.

Baked Buffalo Chicken JalapeƱo Poppers


The little bite sized babies might be cute, but watch out – they pack a little punch!

I love jalapeno poppers AND buffalo chicken so I decided to combine them both and really spice things up!


These are so good and real easy to make. Prep them ahead and bake them just before you're ready to serve. They should be served hot, so don't bake them ahead. If you want to go carb-less or gluten free, I think they would be good without the panko too.  Just please do yourself a favor and wear gloves when you cut the peppers.

PB & J Healthy Oatmeal Cookies

Made with just just 4 ingredients – bananas, oats, peanut butter and jelly!

Made with just just 4 ingredients – bananas, oats, peanut butter and jelly, these cookies are meant to eat warm right out of the oven for a fun spin on my 3-ingredient healthy cookie recipe.

I'm so addicted to making these cookies. Whenever my bananas are over-ripe, I whip up a batch which takes only minutes. These are best when the bananas are super ripe as their natural sweetness is what's used to sweeten the cookies. Keep in mind they aren't crisp like a dessert cookie. Instead these are moist and chewy and best eaten warm, right out of the oven. They are great as an afternoon snack or healthy enough to have for breakfast if you wish. You can easily make half the portion with just 1 banana if you want to make less.


I've made them with walnuts which tasted like banana bread, I've tried them with chocolate chips which so yummy! This time I decided to switch things up and see what happens if I add some chunky peanut butter to the batter and top them with reduced sugar jelly – yum!

Three Cheese Tortellini and Mushroom Soup


I'm working on my manuscript edits this week for my upcoming cookbook, so I thought I would share this delicious soup from the archives!

This is one delicious bowl of soup! Warm and satisfying, with tortellini in every bite. Top this with some fresh shaved Parmigiano Reggiano and you'll experience a wonderful unami taste sensation.

Soup is the perfect one pot meal. Vegetarians can swap out the chicken broth for vegetable broth (also perfect for Meatless Mondays). Using the rind from the Parmigiano Reggiano cheese is optional, but if you have it I recommend using it, it adds so much depth and flavor.


And a little nutritional tidbit about mushrooms, courtesy of registered dietician, Heather K Jones. This veggie has achieved superfood status and with good reason. It’s loaded with important vitamins and minerals, including heart-protecting copper, B vitamins and antioxidants. These fabulous fungus come in a lot of different varieties and are very versatile. 


Heather has generously offered to provide nutritional tidbits on lots of the fruits and vegetables I use in my future recipes. Call me a geek, but I love knowing what I'm eating is not only delicious, but is benefiting my health as well.

I'm sure most of you know I am currently working on my first cookbook, but I'm not sure if you all know that Heather K Jones is working with me on this book. Heather is a great asset to Skinnytaste and has written and contributed to many books for Self, Prevention, Good Housekeeping, and more. She is my go-to person when I have a nutritional question and has posted some great articles on Skinny Bits including The Skinny On Sweeteners

Skinny Buffalo Chicken Strips

Less than 10 minutes to make – these chicken tenders are spicy and delicious!

Quick and easy – these buffalo chicken tenderloins are spicy and delicious! I like to serve them with my homemade skinny blue cheese dressing and celery sticks on the side for a hot and spicy appetizer.

Easy, spicy and delicious!

But gosh, you can eat this so many ways! Serve it with baked fries, or make it a wrap. I think this would be an amazing side for my Sweet Potato Irish Nachos!


However you decide to eat them, I am leaving it up to you! But this I promise, they are good, and it takes just 10 minutes to make!

Dark Chocolate Oatmeal Lace Cookies

Light, crisp and chewy and sandwiched together with dark chocolate!

These delicious cookies are light, crisp and chewy, made with basic ingredients like oats, flour, butter, sugar and spices– then once baked they are sandwiched together with melted dark chocolate. If you're baking cookies for Holiday parties, or just to leave Santa, these are a must!


Holiday traditions in my family always included baking cookies with the kids. My Mom did it with my brother and I, and she still does it with my children. To ease some of the guilt, I try to include some lighter cookie recipes in the mix and these lace cookies are one of my favorites. Of course, I do practice restraint and tracking (and exercise) helps keep me in check this time of the year.



One thing to keep in mind when baking these cookies is the batter will spread once baked so don't put them too close together on the cookie sheet. Once baked they will keep well in an airtight container.

Baked Salmon Cakes

These baked salmon cakes are light and healthy! Served with my favorite zesty avocado cilantro sauce for dipping – absolutely addicting!

Baked salmon cakes make the perfect Holiday appetizer, made with wild Alaskan salmon, diced peppers, capers and breadcrumbs. For dipping, I made my favorite Zesty avocado cilantro dressing which compliments the flavor of the salmon and makes these absolutely addicting!

I was put in charge of the appetizers which was a fun challenge for me, and I came up with the idea to lighten up a recipe I recently had at a friend's house after stumbling on Simply Balanced Wild Alaskan Salmon at Target. I also picked up some holiday plates, napkins and this simple white flat plane platter from their Threshold collection which I will be using for everything.

These baked salmon cakes are light and healthy! Served with my favorite zesty avocado cilantro sauce for dipping – absolutely addicting!

When purchasing fish, I always opt for wild rather than farm raised so I was happy to see wild Alaskan seafood in Target. I adapted the original recipe from Ina Garten with lighter ingredients, then baked the cakes rather than frying and they turned out wonderful. I love a good dipping sauce and knew that my avocado cilantro dressing would be the perfect fresh compliment!

If you are looking for a healthy appetizer idea this Holiday season, look no further. Wild salmon is loaded with heart-healthy omega-3s and these salmon cakes are pretty easy to make. You can assemble them ahead of time, then put them in your oven when your guests arrive. Set them out on the table and watch them disappear!

Baked Mini Spinach and Sausage Arancini

Bite sized Italian rice balls made with brown rice, spinach, chicken sausage and cheese, breaded and baked in the oven. Served with Marinara for dipping – so good!

These mini baked Italian rice balls are made with brown rice, chicken sausage, spinach and mozzarella cheese. Served with some warm marinara sauce, they make the perfect finger foods for the Holiday season or any time you want to serve appetizers.

The Holidays are right around the corner, so this week I am sharing Holiday recipes to get you in the spirit. I don't know about you, but I love Italian rice balls. They are often deep fried and high in calories so I typically stay away unless I'm making this Sicilian Rice Ball Casserole which turns rice balls into a meal!

I came across a recipe from the Baby&Toddler on the Go Cookbook (which btw is such a great book for feeding young kids) for mini baked brown rice aranci, and adapted them with adult palates in mind and more of the flavors I typically like in a rice ball. This recipe cuts a substantial amount of fat by baking instead of frying and replaces the white rice with brown – but you still get plenty of flavor from the sausage and Pecorino Romano cheese.


You can make the filling ahead of time, roll them into balls and refrigerate until you are ready to bake them. I would bread them just before baking.

Light and Easy Cauliflower Gratin


Thanksgiving is at my Mom's house this year. She makes the turkey, stuffing, gravy and mashed potatoes and we all bring the rest. I always bring a vegetable or two and some appetizers, my cousin brings dessert and my sister in law usually brings a salad.


Last year I made a cauliflower gratin that was a lot more complicated than this, but I wanted to test out an easier version knowing many of you will be looking for easy sides. This is super simple, all done in the oven so you don't need to dirty extra pots and pans. You can double this in a 9 x 12 baking dish if you want to feed more people. I used light Havarti cheese because I love the taste, but you can use Swiss, cheddar or whatever you wish. Each serving is under 100 calories or 2 points plus if you're doing WW.

Skinny Mummy Cake Balls


Easy Halloween cake balls made light by using a box cake mix, egg whites and fat free Greek yogurt – no no butter required!

Madison is having a Halloween party in school and I'm in charge of bringing the cupcakes, so I thought cake balls would be perfect for 4 year olds – and less mess than icing on cupcakes.  For an easy Halloween theme I decided to go with mummies and I think they turned out pretty darn cute. These are super easy – if I can make them so can you!


Cake pops were made popular by the very talented Bakerella who I'm actually going to meet next week, I'm so excited! Her cake pops are just darling and if you ever buy her books she's got tons of ideas. The traditional method of making cake pops is by crumbling cake with frosting and forming them into balls. My skinny version is so much quicker – I simply use a cake pop pan.



I played around with a few cake pop pans and machines out there and realized they are not all created equal. After testing out several, I had the most success with the Nordicware cake pop pan, which is only about $17 at Target. I actually own two so I can bake them both at the same time.

These are FAR lighter than traditional cake pops, but you'll still need some self control as they are dipped in white chocolate. Candy melts (available at Michael's) were used to coat the balls. They usually melt perfect for me but this time it was a little thicker than I liked so I had to add a drop of oil to thin it out. I may play around with other brands of white chocolate to see which melts the best.


One tip from making these several times: if you don't need to decorate so many cake balls you can bake them all and decorate what you need, then freeze the rest. Then thaw them to use for another day.

Chewy Chocolate Chip Oatmeal Breakfast Cookie


Oats, ripe bananas and chocolate chips – these healthy, "breakfast" cookies are chewy and delicious, and made with just three ingredients.


I was craving chocolate this morning, and decided to whip up a batch of these yummy cookies for breakfast (I ate 4 cookies, for 4 points). Some of you may recognize them, in the past I made them with walnuts in place of chocolate chips.

I would never eat cookies for breakfast, but these are made with healthy ingredients – oats, bananas, and a handful of chocolate chips (antioxidants, right?) with no added sugar or flour. If you wanted, you could replace the chocolate chips for cocoa nibs, raisins, craisins, whatever! Perfect for breakfast, snack or any time you crave a sweet healthy treat. And these are nut-free, gluten-free and egg free so they are perfect for different diet restrictions.

The riper your banana the better, so make these when your bananas are almost black and freckled with dark spots.


I personally think these are best eaten warm, right out of the oven. They taste almost like mini banana bread muffins, the texture is soft and chewy, not crisp like a dessert cookie. If you're expecting a crispy cookie you would keep in your cookie jar – you WILL be disappointed. But if you have a very ripe banana hanging around your counter, and you are craving chocolate... make these! You will be happy you did.

If you want more of a "traditional" oatmeal cookie recipe, then try my Low Fat Chewy Chocolate Chip Oatmeal Cookies instead... but I wouldn't eat them for breakfast.

Zucchini Pizza Bites


This recipe is an oldie, but goodie! I had a big zucchini that needed using up and I was sooo in the mood for these yummy (and guiltless) zucchini pizza bites!! A perfect way to use up all the zucchini in your garden and satisfy your craving for pizza in a low-carb way.

I make these all the time, sometimes for lunch or as snack. Even my husband thinks they are pretty darn good! They also happen to be gluten-free, and perfect for meatless Mondays. Of course, you could add some leftover sausage, pepperoni, basil, or whatever you like on your pizza. If you haven't tried these yet, they are a must while zucchini is in season!

Note: My zucchini was very large, if your zucchini is smaller, you can cut them on an angle for large ovals.

Skillet Mexican Zucchini


This zucchini is incredibly delicious with a little bit of a Mexican kick from the jalapeno then topped with melted queso blanco. It's also easy and quick, a must try!


I'm a bit of a cookbook addict. It's a problem as I'm running out of room in my home for all my books, but that never stops me from buying new ones. But the biggest problem is that I kinda neglect them. But this weekend I was thumbing through the Aaron Sanchez's (who is one of the judges on Chopped - one of my favorite shows) cookbook Simple Food, Big Flavor who is also one of the judges on Chopped (one of my favorite shows) and I came across his Mexican recipe for zucchini. I can't get enough of zucchini in the summer, in fact I have an entire Pinterest Board devoted to skinny zucchini called Yummy Zucchini, so I decided to test this out...


You MUST try this! I only made a few tweaks using less oil, and and rather than making a cilantro pesto, I added Garden Gourmet cilantro paste and minced pickled jalapeno for kick. It totally exceeded my expectations.
